Signature dishes may also include Hokkaido scallops carpaccio, marinated prawns with avocado puree, and black cod with artichoke puree and teriyaki truffle sauce, among others.

Chef Jun Lee’s culinary journey began at Kyung Hee University in Seoul, followed by training under Chef Susur Lee at Madeline’s and further studies at the Culinary Institute of America. His experience at renowned establishments such as Thomas Keller’s Per Se and Jonathan Benno’s Lincoln has honed his skills, leading to the establishment of SOIGNÉ in 2013. Since then, SOIGNÉ has earned its reputation as a premier dining destination, consistently receiving Michelin stars for its innovative and refined approach to Korean cuisine.
